Need some inspiration for how to consume Maqui Berry Powder

Below are a few simple delicious recipes to get you experimenting :-)

Maqui Raspberry Coconut Raw Cheesecake

Ingredients

Base: 

1 +1/2 cups of coarsely ground almonds (pre soak for 8 hours prior)

4 medjool dates

1 tbsp sea salt

1/8 cup + 2 tbsp maple syrup

Layer 1

1/2 cup of coconut cream

1 cup of raw cashews (pre soak for 8 hours) 

1/4 cup of lemon juice

zest of 1 lemon

4 tbsp maple syrup

Layer 2

1 cup of raspberries (I used frozen as they weren't in season)

1 tbsp maple syrup

1 tbsp lemon zest

​

Layer 3

1/2 cup of cashews (pre soaked for 8 hours)

2 tbsp of Maqui Berry Powder

1 tbsp maple syrup

​

Method

Combine base ingredients in food processor Line a cake tin, and pat down base into bottom of tin. Freeze for minimum 30 minutes. Meanwhile blending layer 1 ingredients in food processor. Pour into cake tin on top of base. Freeze for minimum 1 hour. Blend layer 2 ingredients then add to cake tin. Freeze minimum 1 hour. Combine layer 3 ingredients then add to cake tin. Freeze minimum 8 hours. Remove from freezer 30 minutes before consuming.

Maqui raw cheesecake

Maqui yoghurt

Ingredients

2 teaspoons of Maqui Berry Powder

150grams yoghurt

2 tablespoons of honey

Method

Combine and eat

or

Flatten mixture on sheet of baking paper, cover with another piece of baking paper and freeze. Snap pieces off as you choose to eat. 

​

Maqui + Strawberry jellies

Ingredients

1 cup of strawberries

2 teaspoon of Maqui Berry Powder

6 tablespoons of Gelatin Powder

Method: 

Blend strawberries until a smooth puree. Bloom gelatin over heat. Add strawberries to the gelatin. Allow to cool. Add the Maqui Berry Powder, mix well. Pour mixture into preferred container for setting. I find it easier to cut into shapes after setting but can use molds if preferred. Add to fridge for minimum of an hour to allow to set.

Chia

Ingredients

2 tablespoons of chia seeds

1 quarter of cup of preferred milk, I use Planut goods Almond milk

1 tablespoon of honey

1 teaspoon of Maqui Berry Powder

Blueberries, or preferred fruit and garnish

Method

Combine ingredients excluding Maqui Berry Powder in a container that can be sealed. 

Store in fridge for at least 6 hours. 

Add Maqui Berry Powder prior to eating, make sure stir well. 

Add fruit and mint as garnish.

Maqui Blueberry Muffins

Ingredients

2 tablespoons of Maqui Berry Powder

1 cup of Blueberries (fresh or frozen)

2 large ripe Bananas mashed

2 eggs whisked

1/2 cup of melted butter or oil

1 cup of plain flour

1 tablespoon of baking powder

1 tablespoon of vanilla essence

Method: 

Preheat oven to 180 degree Celsius. Combine ingredients. Prepare muffin tray with preferred method (makes 12). Pour mixture into tray. 

Cook for 25-30 minutes.

Maqui Berry Bowl

Ingredients

1 frozen banana

1/2 cup of frozen raspberries

1 cup of coconut water

1 tablespoon of Maqui Berry Powder

​

Garnishing

Pumpkin seeds

Goji berries

Chia seeds

Coconut

​

Method

Combine ingredients in blender.

Pour into a bowl add coconut, chai seeds goji berries and pumpkin seeds to the top.
